Aspartame is hydrolyzed in the GI tract to phenylalanine (50%), aspartic acid (40%), and methanol (10%) — the phenylalanine component is dangerous to individuals with phenylketonuria (PKU), requiring mandatory label warnings. Sucralose, once marketed as metabolically inert, has been shown in recent studies to alter gut microbiome composition (reducing Bifidobacterium and Lactobacillus populations by 50% in animal studies), generate genotoxic thermal degradation products (chlorinated compounds) when heated above 120C, and impair glycemic response in some individuals.
